This unique vinegar is handcrafted naturally in small batches on the Willow Creek estate in the Nuy Valley using only the finest available Cabernet Sauvignon wine. Unlike modern-day production methods, patience is rewarded in the making of this balsamic vinegar. It is aged slowly over months in oak barrels using the 500-year-old French Orleans method - a slow and delicate process of conversion from wine to vinegar. This wine is a true labour of love, upheld over generations. Planted in 1979 on a rocky triangle of land previously overlooked, the Methode Ancient Cabernet vineyard is gnarled and wizened and produces but a tiny crop each year. About 18 barrels of premium cabernet sauvignon is made each year, fermented and aged in 100% new French oak for a total of two years and the rest of the time in bottle.
