Ten minutes outside the Western Cape town of Wellington, lies the historic and beautiful Bovlei valley. This unique vinegar is handcrafted naturally in small batches on the Willow Creek estate in the Nuy Valley using only the finest available Cabernet Sauvignon wine. Unlike modern-day production methods, patience is rewarded in the making of this balsamic vinegar. It is aged slowly over months in oak barrels using the 500-year-old French Orleans method - a slow and delicate process of conversion from wine to vinegar. This wine is a true labour of love, upheld over generations. Planted in 1979 on a rocky triangle of land previously overlooked, the Methode Ancient Cabernet vineyard is gnarled and wizened and produces but a tiny crop each year. About 18 barrels of premium cabernet sauvignon is made each year, fermented and aged in 100% new French oak for a total of two years and the rest of the time in bottle.
