Certainly a favourite among red lovers, this wine gets its name from the process of whole berry fermentation, where the grapes are simply de-stemmed, and then fermented uncrushed and unpressed.The red wine cellar is designed on a gravity flow system, so after fermentation using natural yeast, the wine is racked off without the use of pumps or presses, and aged in barrels for a year. This is a full-bodied wine with a deep, almost black colour. Red and black fruit flavours infuse with cherry and cassis and hints of coffee on the nose. These flavours follow through on the palate together with black currant and dark chocolate, ending with a noticeable toastiness, a touch of vanilla and soft, juicy tannins. This wine is a true labour of love, upheld over generations.
