Mustard seeds have been highly prized culinary oil-seeds being in use since earlier times. The seeds are fruit pods obtained from mustard plant, in the Brassica family.  Mustards are native to Asia Minor, but these days cultivated as one of the main commercial crop in Canada, India, China, and temperate climates of European region.   The plant reaches about 4-5 feet in height and bears golden yellow colored flowers. Its tiny, round seeds measuring about one mm in diameter are encased inside a fruit pod, in a similar fashion like green pea pod. Generally perceived as health benefiting spice, mustard seeds are indeed very rich in phyto-nutrients, minerals, vitamins and anti-oxidants. Being one of the chief oil seeds, mustards are indeed very high in calories; 100 g of seeds provide 508 calories. Nonetheless, the seeds are made of quality proteins, essential oils, vitamins, minerals, and dietary fiber. Mustard seeds contain flavonoid and carotenoid antioxidants such as carotenes, zea-xanthin, and lutein. In addition, the seeds compose a small amount of vitamin anti-oxidants such as vitamin A, C, and vitamin K. Mustards are rich source of health benefiting minerals. Calcium, manganese, copper, iron, selenium and zinc are some of the minerals especially concentrated in these seeds. Calcium helps build bone and teeth. Manganese is employed by the body as a co-factor for the antioxidant enzyme superoxide dismutase. Copper is required in the production of red blood cells.   Grown for the mustard seeds. The plant is believed to be native to the southern Mediterranean region of Europe and possibly South Asia where it has been cultivated for thousands of years. The spice is generally made from ground seeds of the plant, with the seed coats removed. The small (1 mm) seeds are hard and vary in colour from dark brown to black. TATSOI BRASSICA SPP The spoon-shaped, dark green, evenly spaced leaves form a plant worthy to be grown for its decorative value, given enough room and cool conditions the plants will form beautiful wide rosettes, of regular, concentric circles. Tatsoi is suitable for both baby leaf and whole head production, it can be harvested anytime during growth, young leaves are especially delicious with a mild mustard flavour and good crunchy texture. It has a wide variety of culinary uses that range from using the leaves raw in salad mixes, in soups and in Oriental stir-fry. They have a more robust flavour which many consider to be superior to Bok Choy. Tatsoi matures from seed in only 45-50 days and is able to withstand temperatures as low as -10°C. It will often continue to grow throughout winter, and can even be harvested from beneath snow, making it one of the best vegetables to grow in a cool climate. Harvesting: >21-28 days for babyleaf, 45-50 days to maturity Tatsoi can be harvested at almost any stage of its growth. If large leaves are not important, just flavour, you can grow the plant to the baby stage (4-6 leaves) and harvest the entire plant at about 3-4 weeks. As the weather starts to warm in spring the leaves tend to grow upright. If Tatsoi is to be harvested on a cut and come again basis, use the largest leaves on the outside and leave the smaller ones towards the centre to develop further. It can then be left to grow again for a second or more harvest. Tatsoi grows more slowly than other oriental brassicas. It is a good idea to give the plants a good drink of water and/or liquid fertilizer after each picking. Known as "Tah Tsai" in China, Tatsoi or Rosette Pak Choi is among the most popular of oriental greens.   Garden cress (Lepidium sativum) is a fast-growing, edible herb that is botanically related to watercress and mustard, sharing their peppery, tangy flavour and aroma. In some regions, garden cress is known as garden pepper cress, pepper grass, pepperwort or poor man's pepper. This annual plant can reach a height of 60 cm (~24 inches), with many branches on the upper part. The white to pinkish flowers are only 2 mm (1/12 of an inch) across, clustered in branched racemes. Capparis spinosa, the caper bush, also called Flinders rose, is a perennial winter-deciduous plant that bears rounded, fleshy leaves and large white to pinkish-white flowers. The plant is best known for the edible flower buds (capers), often used as a seasoning, and the fruit (caper berry), both of which are usually consumed pickled. he salted and pickled caper bud (also called simply capers) is often used as a seasoning or garnish. Capers are a common ingredient in Mediterranean cuisine, especially Cypriot, Italian and Maltese. The mature fruit of the caper shrub are also prepared similarly, and marketed as caper berries. The buds, when ready to pick, are a dark olive green and about the size of a fresh kernel of corn. They are picked, then pickled in salt, or a salt and vinegar solution, and drained. Intense flavour is developed as mustard oil (glucocapparin) is released from each caper bud. This enzymatic reaction also leads to the formation of rutin often seen as crystallized white spots on the surfaces of individual caper buds.
