The onion genus Allium, placed in the Amaryllidaceae family, comprises monocotyledonous flowering plants and includes, besides the onion, garlic, chives, scallion, and the leek. Allium species are herbaceous perennials with flowers produced on scapes. They grow from solitary or clustered tunicate bulbs and many have an onion odor and taste. Plants are perennialized by bulbs that reform annually from the base of the old bulb, or are produced on the ends of rhizomes or, in a few species, at the ends of stolons. A small number of species have tuberous roots.           The bulbs' outer coats are commonly brown or grey, with a smooth texture, and are fibrous, or with cellular reticulation. The inner coats of the bulbs are membranous. Allium cernuum commonly known as Nodding Onion or Lady's Leek is a perennial plant in the genus Allium. It grows in dry woods, rock outcroppings, and prairies. Allium cernuum has an unsheathed slender conical bulb which gradually tapers directly into several keeled grass-like leaves that are 2mm to 4mm wide. Each mature bulb bears a single flowering stem, which terminates in a downward nodding umbel of rose coloured flowers. Flowers are bell-shaped, about 5 mm across, pink or white with yellow pollen and yellow anthers. The flowers mature into spherical crested fruits which later split open to reveal the dark shiny seeds. This plant does not have bulblets in the inflorescence. Allium cernuum is edible and has a strong onion flavor, and has often been used in cooking. This species is also cultivated in many places for its attractive flowers. The cloves are also much larger than conventional garlic with a milder taste, making it suitable for a wide choice of culinary uses, especially roasting.
