TATSOI BRASSICA SPP The spoon-shaped, dark green, evenly spaced leaves form a plant worthy to be grown for its decorative value, given enough room and cool conditions the plants will form beautiful wide rosettes, of regular, concentric circles. Tatsoi is suitable for both baby leaf and whole head production, it can be harvested anytime during growth, young leaves are especially delicious with a mild mustard flavour and good crunchy texture. It has a wide variety of culinary uses that range from using the leaves raw in salad mixes, in soups and in Oriental stir-fry. They have a more robust flavour which many consider to be superior to Bok Choy. Tatsoi matures from seed in only 45-50 days and is able to withstand temperatures as low as -10°C. It will often continue to grow throughout winter, and can even be harvested from beneath snow, making it one of the best vegetables to grow in a cool climate. Harvesting: >21-28 days for babyleaf, 45-50 days to maturity Tatsoi can be harvested at almost any stage of its growth. If large leaves are not important, just flavour, you can grow the plant to the baby stage (4-6 leaves) and harvest the entire plant at about 3-4 weeks. As the weather starts to warm in spring the leaves tend to grow upright. If Tatsoi is to be harvested on a cut and come again basis, use the largest leaves on the outside and leave the smaller ones towards the centre to develop further. It can then be left to grow again for a second or more harvest. Tatsoi grows more slowly than other oriental brassicas. It is a good idea to give the plants a good drink of water and/or liquid fertilizer after each picking.   Bulls Blood beetroot is a magnificent dual purpose variety known for its deep red coloured leaves. This old variety has been used for both ornamental and culinary use since Victorian times. It was listed pre-1900 in England and is probably the only decorative-leafed Victorian beetroot variety surviving. This useful crop can be used at any stage of growth, harvest the leaves for baby leaf, in mixed salads or use steamed like spinach, or the roots can be left to grow like any other beetroot. Today, Bull's Blood is the variety used by the commercial growers for both baby leaf and mixed salad leaves. The leaves are broader than other beetroot varieties, more flavourful than other red accent crops, they can be harvested for baby leaf salads in as little as 35 days. Left to mature they have a particularly sweet taste when cooked, while the medium-sized spherical roots are tender and have a great flavour especially when young. Bhut Orange Copenhagen From Denmark comes the “BOC” or Bhut Orange Copenhagen, a Chinense variety.  This strain should be a bit different in flavour – more fruity and not so much nagaish. The plant grows to about 60 cm in a pot and would probably grow bigger, if you plant it in the ground. The pods are up to 6 cm long and 2-3 cm wide.  Flavour wise:  Instant fruity, like tropical fruity and it doesn’t have the naga taste. Heat level:  The heat comes fairly quick and being a Bhut, it’s one of the hottest chillies in the world. The Bialetti Venus is a stainless steel moka pot for brewing coffee that is stronger than traditional coffee but not quite like espresso. The pressure that is used does make the coffee stronger and extracts more flavor and caffeine than a drip coffee maker. The flavour of Moka pot coffee depends greatly on bean variety, roast level, fineness of grind, water profile, and the level of heat used. Moka pots are sometimes referred to as stove-top espresso makers and produce coffee with an extraction ratio similar to (but somewhat higher than) that of a conventional espresso machine. The resultant brew has increased extraction of caffeine and flavours from the grounds versus filter coffee, resulting in a stronger brew than that obtained by drip brew methods.   However a typical Moka coffee is extracted at relatively low pressures of 1 to 2 bar while standards for espresso coffee specify a pressure of 9 bar. Therefore, Moka coffee is not considered to be a true espresso and has different flavour characteristics. To brew your coffee in the Bialetti Venus or traditional aluminum Moka pot, fill the bottom with water up to the safety release valve that is on the side of the bottom of the pot. After you fill the water, the filter is placed in the bottom of the pot and filled with fine ground coffee of your choice (finding the right grind is crucial for a good cup of coffee - too fine and it will travel up the spout, and too course and you will not get enough flavour). The Top element with its filter and rubber gasket is screwed on the bottom and you heat the pot on a gas, electric or induction burner (on a medium to high heat). You could even use natural fire like a camp fire to heat the moka pot but this of course would discolor the moka pot..The Bialetti Moka Pot will heat the water and create steam which is forced through the coffee grounds in the filter and up the spout  inside the top of the pot. The spout has a unique design with the two holes being slanted downward so that the coffee coming out does not sputter toward the top of the pot, like many other brands of moka pots do.   GALIA MELON   Melon  Galia as the name suggests, is a Galia type that produces very uniform globe-shaped fruit with a small cavity. This luscious variety has skin that is netted with gold and firm flesh with good flavour. The flesh is the cool-green of a glacial lake.  The vines yield fruit with a typical size of 0.8 to 1.2kg. Around 5 to 8 fruits per plant can be expected. 65 to 70 days to maturity. Galia fruits have a spicy-sweet aroma, with a flavour more like a cantaloupe than honeydew, although with a complexity of their own. Serve with prosciutto or parma ham as antipasto. Or at meal’s end, with bunches of fat purple grapes and tangerines. Once picked it has good storage ability in the fridge. This very special single origin coffee comes from one of the largest and most historic coffee farms in Costa Rica. Aquiares was actually established by British farmers in 1890, and was one of the first estates to export Costa Rican coffee. The farm was purchased by the current owning family in 1971 and management came under Don Alfonso, after whom the coffee is named, in 1992. Lots bearing Don Alfonso's name are among the best the estate has to offer - a way of paying homage to the legacy he has created for his community and family. When he took over, he not only championed top quality production, but also social justice, ensuring that the welfare of his farm workers and the wider community were treated as high priorities. What's particularly exciting about this Don Alfonso coffee is that our friends at Origin have managed to source both a fully washed and a natural-processed version. It's a rare opportunity to taste the exact same coffee processed two different ways and we'd highly encourage you to undertake this exploration of coffee flavour while you can -  your taste buds won't regret it. This washed version has a tropical fruit acidity that's definitely more pronounced than its  natural counterpart. It also has a sugary sweetness accompanied by a winter-spice characteristic that's reminiscent of cinnamon. You  may also find some lychee, particularly in a Chemex brew, which was our favourite way to enjoy this coffee.
