The Yirgachefe region is known for its clean and intensely floral coffees, grown in the high-rolling hills of South-Western Ethiopia. Ripe cherries are delivered to the mill, where they are graded and placed onto raised drying beds in thin layers and turned every few hours to avoid over-fermentation and mould growth. Six to eight weeks later, depending on weather and temperature, the dried cherries are then milled and defects removed prior to shipping.
