One of the most widely drunk beverages in the world, coffee is close to many hearts, and like wine, the area where it is grown affects the taste and flavour profile (along with other factors, including roast, freshness, and so on). Legado sources beans from all over the world, roasting them in sunny Stellenbosch. The Yirgachefe region is known for its clean and intensely floral coffees, grown in the high-rolling hills of South-Western Ethiopia. Ripe cherries are delivered to the mill, where they are graded and placed onto raised drying beds in thin layers and turned every few hours to avoid over-fermentation and mould growth. Six to eight weeks later, depending on weather and temperature, the dried cherries are then milled and defects removed prior to shipping.
