  Asparagus officinalis is a spring vegetable, a flowering perennial plant species in the genus Asparagus. It was once classified in the lily family, like its Allium cousins, onions and garlic, but the Liliaceae have been split and the onion-like plants are now in the family Amaryllidaceae and asparagus in the Asparagaceae. Asparagus multiflorus will climb given the opportunity or, standing alone becomes a large tangled shrub. It may reach 2 m in height and width. The many pale green zigzagging stems are hard and slightly hairy. Stems have fine longitudinal lines or ridges along the surface. The nodes are just thick knobs with no spines. Small branchlets emerge from these knobs on which the tiny cylindrical cladodes or leaf-like stems grow. The flowers are positioned in the cladode fascicles. They are small and white, blooming in midsummer. The plant grows on the coast and inland in parts of the Eastern Cape and eastern parts of the Western Cape, including the Little Karoo. The boiled young stems of Asparagus multiflorus are sometimes eaten as a vegetable. Cutting the old stems back at the end of winter stimulates new growth suitable for harvesting. The taste is different from the conventional cooked asparagus.   Salsify is an old-fashioned heritage root crop. This Mediterranean winter vegetable has a delicate taste, ever so slightly sweet, some say slightly reminiscent of oysters so much so that oyster plant is one of its common names. Although primarily a root crop, the young shoots called chards, flower buds, and flowering shoots can also be eaten. A biennial plant, salsify is grown as an annual and harvested in its first year. The leaves look like a clump of grass and the root is about the size of a large carrot, bumpy like a parsnip with beige skin. When cultivated for a few years, salsify will produce stalks that bear purple flowers. Salsifys grass-like tops are slightly sweet and tender enough to be eaten in salads, the roots of the plant are dug up and cooked as you would parsnips.   Grown for the mustard seeds. The plant is believed to be native to the southern Mediterranean region of Europe and possibly South Asia where it has been cultivated for thousands of years. The spice is generally made from ground seeds of the plant, with the seed coats removed. The small (1 mm) seeds are hard and vary in colour from dark brown to black.   Bulls Blood beetroot is a magnificent dual purpose variety known for its deep red coloured leaves. This old variety has been used for both ornamental and culinary use since Victorian times. It was listed pre-1900 in England and is probably the only decorative-leafed Victorian beetroot variety surviving. This useful crop can be used at any stage of growth, harvest the leaves for baby leaf, in mixed salads or use steamed like spinach, or the roots can be left to grow like any other beetroot. Today, Bull's Blood is the variety used by the commercial growers for both baby leaf and mixed salad leaves. The leaves are broader than other beetroot varieties, more flavourful than other red accent crops, they can be harvested for baby leaf salads in as little as 35 days. Left to mature they have a particularly sweet taste when cooked, while the medium-sized spherical roots are tender and have a great flavour especially when young.
