Tarragon is called the "King of Herbs", and with good reason. It is the main flavoring in many of the sauces that form the foundation of classic cuisine, such as bernaise, rigavote and tartare. When paired with chopped sprigs of fresh parsley, chives, and chervil, you have the traditional seasoning blend known as fines herbs. This aromatic blend enhances the flavors of egg, chicken and fish dishes, and is also used as a basis for salad dressings. When using tarragon in cooked dishes, it is best to add it at the end, as heat tends to decrease its flavor. Unlike most of the other herbs, tarragon loses the potency of its flavor when dried. Mustard seeds have been highly prized culinary oil-seeds being in use since earlier times. The seeds are fruit pods obtained from mustard plant, in the Brassica family.  Mustards are native to Asia Minor, but these days cultivated as one of the main commercial crop in Canada, India, China, and temperate climates of European region.   The plant reaches about 4-5 feet in height and bears golden yellow colored flowers. Its tiny, round seeds measuring about one mm in diameter are encased inside a fruit pod, in a similar fashion like green pea pod. Generally perceived as health benefiting spice, mustard seeds are indeed very rich in phyto-nutrients, minerals, vitamins and anti-oxidants. Being one of the chief oil seeds, mustards are indeed very high in calories; 100 g of seeds provide 508 calories. Nonetheless, the seeds are made of quality proteins, essential oils, vitamins, minerals, and dietary fiber. Mustard seeds contain flavonoid and carotenoid antioxidants such as carotenes, zea-xanthin, and lutein. In addition, the seeds compose a small amount of vitamin anti-oxidants such as vitamin A, C, and vitamin K. Mustards are rich source of health benefiting minerals. Calcium, manganese, copper, iron, selenium and zinc are some of the minerals especially concentrated in these seeds. Calcium helps build bone and teeth. Manganese is employed by the body as a co-factor for the antioxidant enzyme superoxide dismutase. Copper is required in the production of red blood cells. Parsley has multiple sprigs of curling, divided leaves that grow into a handsome mound of greenery. The foliage reaches about 1 foot and remains fresh and appealing throughout the growing season. The plant is an evergreen that can reach a height of 12 m.  It possesses large and leathery, glossy green leaves that are about 12.5cm (five inches) in length on average, the leaves of the tree all have very prominent veins on the lower surface. Anise is a dainty, herbaceous plant that grows to 90cm (36in) tall. The tiny white flowers each around 3mm (¼in) in diameter, are produced in dense umbels. The leaves at the base of the plant are simple, long and shallowly lobed, while leaves higher on the stems are feathery pinnate, divided into numerous leafs. The fruit is an oblong dry schizocarp, 3 to 5 mm long. It is the seedpods that are referred to as "aniseed". Anise is most famous for the liquorice flavour of its leaves and seeds. Use the leaves fresh in salads and soups, and the seeds for flavouring cookies, pastries, and confections. In Western cuisine, anise is mostly used in bread and cakes. Fruit products are aromatized with anise. In small amounts, anise seeds are sometimes contained in spice mixtures for sausages and stews. Anise is also used to flavour many liqueurs.
